Avial-Vegetarian Recipes with Photos - Ingredients and Method of Preparations

Avial is a Traditional Kerala Recipe which is common during vegetarian Sadyas. Avial also prepared during festivals like Onam and Vishu. Because of too many vegetables, Avial is very nutritious. Coconut and Oil added are not boiled, because of this, it is good for health.


  • Snake Gourd (Padavalanga) : 1/2 Cup
  • Beans : 10
  • Carrot : 1
  • Drumstick : 3
  • Raw Banana (Pacha Kaya) : 2
  • Grated Coconut : 2 Cups
  • Coconut Oil : 2 Teaspoon
  • Green Chillies : 4
  • Curry Leaves : 2 Sprigs
  • Small Onions (kunjulli) : 8
  • Curds : 1/4 Cup
  • Cumin Seeds (Jeerakam) : 1/2 Teaspoon
  • Turmeric Powder : 2 Teaspoon
  • Salt : To Taste

Preparation Steps

  • Grind the coconut, green chilies, cumin seeds, Small onions with little curd (without water)
  • Wash and cut all vegetables 2 inch lengthwise and 1/4 inch thickness
  • Mix Vegetables with salt and turmeric powder, 1 sprig curry leaves and 1 teaspoon coconut oil
  • Add some water and cook (mild heat) the vegetables
  • Make sure that vegetables are not overcooked
  • Add the coconut mixture and mix well
  • Add fresh curry leaves and coconut oil
  • Add curd, mix well and remove from the heat
  • You can add tamarind or Raw mango (Pacha Manga) instead of curds
